Edible collab: an approved delivery service
Sometime in August, I came across a delivery service that sparked my interest. I contacted Chantal, the passionate director of Edible, who personally delivered two medium-sized vegetable boxes to my door on the 21st of August and the 4th of September. The boxes were filled with the highest quality, locally grown organic produce, which got me hugely exited about creating Veggie Foodie meals.
The first box was filled with hasselback potatoes, sweet potatoes, leeks, lemons, sage, kumquats, avocado, radishes and more! The second box was filled with flat leaf kale, cos lettuce, butternut, rosemary, oranges, potatoes, cauliflower, oyster mushrooms, carrots, beetroot, asparagus and lemons!
The first recipe that I made, was an easy Roast Potato Salad Bowl from the Deliciously Vegan app by Anett Velsberg. I'm obsessed with the avocado dip that is part of this creation! It is so flavourful, yet so easy to make. I baked the potatoes in the airfryer after soaking them.
I furthermore made a Hearty Veg Salad with Tahini Dressing, which is a recipe from the GreenMonday SA website and is created by Jessica, The Green Dietitian. I make this recipe regularly and was so happy to find all the ingredients in the second Edible box!
When I found oyster mushrooms and asperagus in one box, I knew I had to make the Oyster Mushroom Maki Rolls from Anett's Blog. This recipe is a crowd-pleaser and is next level delicious. The mushrooms offer a rich "meaty" experience.
Lastly, I made some green juice with all the leftover greens, lemon, ginger and some apple. I'm a big green juice believer and couldn't be happier to receive so many greens in one box!
